most probably the update messed up /etc/vservers/.defaults/vdirbase/
this happened to me too when i upgraded util-vserver on debian sarge to
version 0.30.214-5~bpo40+2 (backports)
i ended up in directly linking /etc/vservers/<name>/vdir to the final
location and not using multiple layers of symlinks :) e.g.
cd /etc/vservers/debian; rm vdir; ln -s /mnt/vservers/debian vdir
